PROJECT MISE EN PLACE
At the time they closed the doors on their tiny Oxford St space, Saint Peter was, by all accounts, hitting their stride.
An international name, it had received nods from the James Beard Awards and the World’s 50 Best Restaurants.
Owner and Head Chef, Josh Niland, reached celebrity status and celebrities, in turn, were knocking on the door to dine on fish like they’d never had it before.
So when Saint Peter took a hiatus to move to The Grand National Hotel, the anticipation was high as punters speculated on how they’d show up on an even greater stage.
Behind the scenes, one of those opening projects included uniforms, and Worktones were lucky enough to get the call-up.
This is a restaurant with so much clout, but it’s also a very humble venue. Josh, Julie and the entire team are genuinely divine industry folk, so it was really exciting to have the opportunity to work with them. Anyone whose anyone would want to be involved in that opening and to be part of the process, even in our own little way, made us very proud.

PROCESS NOTES
Saint Peter’s Restaurant Manager, who had worn Worktones in previous roles, came to the showroom to explore ideas for their front-of-house team.
At first interested in a bespoke design, the original idea leaned into a classic Australiana colour palette and featured a Galah-inspired pink.
Eventually, though, ideas were scaled back to create a refined look, one that ended up using Worktones ready-to-wear range.
The pivot was out of a call for simplification on their side. It’s fun to explore a highly differentiated, grandeur look and feel, but they are the masters at finessing, and so that’s what we did. We reeled it back in and went for something simple and beautiful.

Bespoke uniforms have the perception of being the next tier of consideration, but the reality is we also have a ready-to-wear offering that fits seamlessly into most venues, from a small bar to the best restaurants in Australia.
- Sarah Mulholland,
Our understanding and knowledge of what venues need, from fabrics to silhouettes, is translated into something ready-made that often is the perfect solution. And if it isn't, the perfect solution is likely based on our existing blocks because they’re tried and tested.

ORDER UP
Front-of-house at Saint Peter wear Worktones Dark Navy Nice Pants with the matching Unstructured Blazer. The bar staff wear a bespoke dark navy long bistro style apron.
Within months of opening, Saint Peter took out the Good Food Guide Best Restaurant of The Year and was awarded three hats, delivering on all expectations of this small but mighty team.
This is a restaurant that upon opening became the best restaurant in Australia. Their approach is so particular in everything they do. From selecting the smallest little oyster fork to the fish they order, every single minute detail is intentional. Uniforms fall into that and their choice to wear our ready-made product speaks really strongly to our quality.

THE REVIEW
Working with Worktones was so easy. We weren't sure which direction we wanted to go with the uniforms so Worktones assisted us with this, providing samples and ideas. It was an investment for us to dress the entire front of house team in the matching Worktones chore jacket and pants but it's paid off - they look so polished and professional. The team are very happy with the uniforms.
